This is the reason why samosa has been recognized as a famous street food here for a long time. Onion and garlic are included in the samosas available in the market. Although many people avoid onions and garlic. Especially on special days like Pitru Paksha and Navratri (Navratri 2022), onion, garlic are not eaten. In such a situation, if you want to eat something tasty, then you can prepare samosas full of flavor without onion and garlic.

Ingredients for making Samosa
Maida – 1 cup
Potato – 1/2 kg
Tomato – 1
Carrot grate – 1 (optional)
Red chili powder – 1 tsp
Cumin powder – 1/2 tsp
Roasted peanuts – 1/4 cup
Asafoetida – 1 pinch
Fenugreek seeds – 1/4 tsp (optional)
Black pepper powder – 1/4 tsp
Amchur – 1 tsp
Red Rai – 1 tsp
Whole cumin seeds – 1 tsp
Ajwain – 1/2 tsp
Ginger grated – 1 tsp
Green chili – 3-4
Green coriander chopped – 3 tbsp
Curry leaves – 7-8
Desi Ghee – 3 tsp
Oil – for frying
Salt – as per taste
how to make samosa
To prepare samosas without onion, garlic, first boil the potatoes and peel them and mash them in a big pot. After this, finely chop tomatoes, green chilies and green coriander. Now sieve flour in a vessel and mix it by adding celery and a little salt. After this, knead a hard dough by adding water little by little. After this, cover the dough and keep it aside for half an hour.

Now start the process of preparing samosa stuffing. Put oil in a pan and heat it on medium heat. After the oil is hot, add mustard seeds, cumin seeds, fenugreek seeds, curry leaves and fry for some time. After this, add grated ginger and chopped green chilies to the spices and fry them. After frying the spices for about a minute, add finely chopped tomatoes and other dry spices and mix them well and let them cook.
When the tomatoes become soft, mix the mango in it and then add roasted coarsely ground peanuts and roast them. Fry this mixture while stirring it well for some time. After this, at the end add mashed potatoes and with the help of a ladle, mix the potatoes with spices while stirring. Put green coriander leaves in it and switch off the gas.

Now take maida flour and knead it once more and prepare its balls. Take a ball and roll it and cut it from the middle and take it in the shape of a cone. Fill the prepared potato stuffing in it and apply a little water and close the top and give it the shape of samosas. Similarly prepare samosas with all the spices and keep them aside in a plate.
Put oil in a pan and heat it on medium heat. When the oil becomes hot, add samosas according to the capacity of the pan and deep fry them. Flip the samosas and roast them till they turn golden in color from both the sides and the samosas become crispy. After that take them out in a plate. Similarly fry all the samosas. Your delicious onion and garlic samosas are ready. Serve them with tomato sauce or green chutney.
