The famous confectioner of Karauli, Brijmohan Hardeniya ji, who got fame by the name of Jhandu Maharaj, got Karauli also known as Rabdi. After the death of Jhandu Maharaj, currently his elder son Kanhaiya Hardeniya has taken over the command of making rabri, while carrying on the legacy, Kanhaiya is making his father’s famous rabri even more famous. Zandu Maharaj’s Rabri has been ruling the tongues of lovers for many years due to its unique taste and wonderfully balanced sweetness.

The flavor of famous rabri is intact for three generations
Kanhaiya Hardeniya, who makes rabri, says, ‘Earlier our father used to make rabri, now we are making it and we have also prepared our children for the future.’ Kanhaiya believes that as long as the family members carry forward the business, the quality will not be affected and the customers will also be satisfied. According to him, his father’s name will continue to grow in the same way.
How is this special Rabri made and what is its value?
Kanhaiya explains that first of all three kadhai are placed on the furnace. Then 8-8 liters of milk is poured into each pan and boiled. After the milk comes to a boil, cream sticks are pasted on the ends of the pan and when fully cooked, sugar and cardamom powder are added. Kanhaiya says that 50 to 60 kg of rabdi is made every day, whose demand is increasing day by day. The price of this famous rabri is Rs 340 per kg.
