Ingredients for Hariyali Matki Khichdi
Matki Sprouts – 1 cup
Onion – 1
Spinach – 1 cup
Rice – 1 cup
Mint leaves – 1/2 cup
Spinach puree – 1/2 cup
Black pepper – 1 tsp
Garam Masala – 1 tsp
Cumin – 1 tsp
Desi Ghee – 4 tsp
Garlic – 8 buds
Asafoetida – 1 pinch
Salt – as per taste
How to make Hariyali Matki Khichdi
To make Hariyali Matki Khichdi, first of all, take the pot (Matki) and wash it in clean water two-three times. After this, soak them in water for overnight and keep them. After this, take them out of the water and put them on the sieve so that the remaining water also drains out. After this, take the rice and clean them, wash them 2-3 times and soak for 20-30 minutes.
Now take a pan and put ghee in it and keep it on medium flame. When the ghee melts, add cumin and asafetida and fry it. After a few seconds, when cumin seeds start crackling, add finely chopped onion and garlic and fry while stirring. After some time, when the onion becomes soft, then add mango sprouts and soaked rice, mix and cook.

After some time, add 5 cups of water to the rice and lentils and let it cook while stirring with a ladle. While cooking the khichdi, keep the flame on medium and high. After this, add black pepper powder and garam masala and mix it with the help of a ladle and let it cook for 2-3 minutes more. After this, add spinach puree, chopped spinach, green chillies and mint leaves to the khichdi and let it cook by mixing well.
Now take a small tempering pan and heat some ghee in it. Add chopped garlic to it and temper it. After this, add the prepared tempering to the khichdi and mix it well. Delicious Hariyali Matki Khichdi for lunch or dinner is ready. Serve it with curd or chutney.
