Golgappe Recipe: There is hardly anyone here who has never tasted Golgappa. Many people will be seen enjoying the taste of spicy golgappas on the roadside handcarts. Rich or poor, everyone is seen standing on the roadside to taste this street food. The taste of golgappas is very much liked and everyone whether children or adults eat it with a lot of chatter. If you also like to eat golgappas and are cautious about hygiene, then golgappas like market can be made at home too.

Ingredients for making Golgappas
All purpose flour – half cup
Semolina – 1 cup
Potato – 4-5
Black gram boiled – 1/2 cup
Onion – 1
Green chili – 2-3
Curd – half a bowl
Chaat masala – half tsp
Tamarind chutney – 2 tsp
Boondi – 1/4 cup
Jaljeera – 1 sachet
Fine Sev – 1/4 cup
Black pepper powder – half tsp
Coriander leaves – 1/4 cup
Oil – for frying
Salt – as per taste
How to make Golgappas
If you want to make golgappas like market, then first put all three flour, semolina and a pinch of salt in a vessel and mix all three well. After this, knead the dough by adding little water to this mixture. After kneading the hard dough, cover it with a cotton wet cloth and keep it aside for half an hour. After half an hour, take the dough and knead it once again and make a ball of it. Now take a ball and roll it like a roti and cut it with a small circular lid and give it the shape of a golgappa and keep it in a plate.
Roll all the dough balls in the same way and keep them in the form of golgappas. After this, put oil in a pan and heat it. After the oil is hot, add golgappas according to the capacity of the pan and deep fry them. They will swell completely. After frying them lightly from both the sides, take them out and keep them. Similarly fry all the golgappas and take them out in a vessel and keep them aside.

Now prepare the masala for filling the golgappas. For this, first boil the potatoes and gram. After this, take off the peels of potatoes and put them in a vessel and mash both of them by adding black gram to it. Now add finely chopped onion, green chili, chaat masala, black pepper powder, green coriander leaves and salt as per taste and mix. After that keep the stuffing aside.
Now prepare the water of Jaljeera according to the pungency you like and add boondi to it. After this, take golgappas one by one and pierce between them with fingers, add potato masala, curd, fine sev and tamarind chutney and serve by sprinkling chaat masala and green coriander leaves on top.
