Ingredients for Cashew Curry
Cashew nuts – half cup
Onion (medium size) – 2
Cashew Nuts – 1/2 cup
Tomato – 1
bay leaf – 1
Curd – 1 tbsp
Cream – 1 tbsp
Red chili powder – 1/4 tsp
Steep red chili – 2
Green chili chopped – 2
Cumin – 1 tsp
Coriander Powder – 1 tsp
Turmeric – 1/4 tsp
Kasuri methi – 1/4 tsp
Green coriander leaves chopped – 2 tbsp
Oil – 2 tbsp
Ghee – 2 tbsp
Salt – as per taste

How to make Cashew Curry
To make cashew curry, first of all finely chop 1 onion, green chili and tomato. After this, put ghee in a pan and heat it on medium flame. When the ghee melts, add cashews and fry them till golden brown. After this, take out the cashew and keep it aside in a bowl. Now take another wok and heat oil in it. On the other hand, put water in a vessel and put cashew shavings and cut an onion in it and boil it.
After the cashew shavings and onions come to a boil, turn off the gas and take out all the water and grind both the things in a mixer. Now take out this paste in a bowl and keep it. Meanwhile, when the oil pan is hot, put cumin and bay leaves in it. When the cumin seeds start crackling, add one pre-cut onion and fry it. When the onions become soft and golden, then add chopped tomatoes and all the spices and fry them.

When the mixture starts smelling and it leaves the oil, then add the prepared paste of cashew shavings and onion in it. Fry the gravy for at least 8-10 minutes so that its rawness gets completely removed. After this, add cream and curd to the gravy and let it cook. When the gravy is cooked, mash it with your palms, add kasoori fenugreek and stir it, then turn off the gas. Lastly, mix cashew nuts and green coriander leaves in the gravy and serve hot.
